You may have heard about this wonderful product of Japan, Kewpie Mayonnaise. Compare to American counterpart, it tastes richer and milder. It’s because Kewpie uses egg york instead of whole egg, and use rice vinegar which is milder than white vinegar for their mayonnaise.
There are people in Japan who carries their own small tube of kewpie mayonnaise wherever they go, and use on everything they eat. It’s that good. When I was little, I once used it over bowl of white rice, and my mom was not happy about it. She thought it will kill the taste of rice. You know how Japanese people are crazy about their shiny sweet white rice.
Mayonnaise is used as a condiment for popular Japanese street foods such as Okonomiyaki (Japanese savory pancake), or Takoyaki (octopus ball). Some people use it as marinade for meat to make it tender. Please see link below for my favorite recipe using mayonnaise.

Kewpie Mayonnaise is usually available in any Asian market.
